When the days get busy I like to make the most of our time together. Sometimes that means cooking together . . .I love spending time with my babies on the weekends. I create my schedule around my husbands schedule so that no one else stays home with them because in these very impressionable years we love that we have the freedom to be home with them. So on the days when Momma has stuff to get done around the house or things to work on for photography our dinner meals have to be EASY and FUN. This way I can include the kids in something different but still feed everyone LOL. So I'm really into anything similar to a chili style dish. PLUS if you can add rice the next day and make it a second meal. (which I will totally be doing by the way ;) ) it automatically goes on my make it over and over again list. Here is the list of ingredients I use ( feel free to customize to your needs and trial and error with this dish is especially fun!) 1 cup of chicken broth 1 can of cream of chicken 1 can of whole kernel corn 1 large can of pinto beans 1 small can of black beans (robb isn't a fan) 1 small can of green chilis 1 large can of mild rotel 2 cans of green chili enchilada sauce 2 packets of taco seasoning 4 chicken thighs ( to make this easier you can totally use canned chicken or a rotisserie I just used what we had on hand) 1 yellow onion open all the cans. drain the beans and the corn. I don't drain the Rotel because I like all the juice. let the kids take turns pouring ingredients in describing things and even tasting as you go if you want. chop the onion and let the kids put the pieces in if you want. The best part of this recipe is that for all ages it allows them to be involved and participate as much or as little as you want them to. After they are done walk them through cleaning up. I gave Seay the job of throwing all the cans away and gave Wyatt the chore of wiping the spilled chicken broth up off the table before I sprayed with cleaner and wiped again. Kennedy is still little so I didn't give her a chore but She loved it just the same. I put the pot on the stove to heat and the chicken thighs went into the air fryer for easy cooking seasoned them with salt and pepper and when they came out I chopped them into 1 inch pieces and added them in. Once the chicken is ready and the chili is as hot as you want it you can go ahead and serve it up! top with all your favorite things. This is my favorite way to heat it up as an adult since i use mild everything in the pot for this babies. I like to use sour cream, tostadas, mixed cheese, pico de gallo, jalapenos, and even guacamole! I hope you LOVE our taco can chili! let us know how you customize it so we can try it your way!!
